Commitment to Quality and Provenance
As Husk’s Head Distiller Quentin Brival explained, the philosophy is centered on using the best ingredients and processes at every step of rum production. Husk Rum has pioneered the production of juice rum in Australia, also known as Agricole in the French Caribbean. This style, influenced by Brival’s roots in Martinique, is reimagined with an Australian twist, reflecting the unique characteristics of Tumbulgum and the Northern Rivers of New South Wales, an area with a rich geological history dating back 23 million years.
“For us, it was crucial to protect and define this style of rum,” Brival said. “When consumers purchase a bottle of Cultivated Rum, they know they are getting a product made in the cane-growing regions of Australia, using the best cane juice to create the finest rum possible.”
Australian Cultivated Rum (ACR) Standards
Husk Rum adheres to the standards of Australian Cultivated Rum (ACR), which require the use of fresh cane juice and a production base within Australia’s cane-growing regions, stretching from the Northern Rivers of New South Wales to northern Queensland. This region has a 150-year history of sugar cane cultivation, contributing to the rich culture and quality of the rum.
“ACR rums are pure,” Brival noted. “We don’t add any sugar or color; everything you see comes directly from the sugar cane.”
To comply with EU regulations, Husk avoids using the term Agricole, which is legally restricted to rum made in the French Caribbean and Madeira. Instead, they refer to their product as fresh juice rum, respecting international nomenclature and emphasizing their unique regional identity.
Terroir and Regional Distinctiveness
Rum is often considered the terroir spirit, reflecting the regionality of its ingredients. In Australia, the diverse climates from northern Queensland to northern New South Wales result in different flavor profiles in the rum. Husk respects this diversity, planting cane varieties like Q2-40 that thrive in their specific climate, ensuring the highest quality raw materials for their rum.
Farm-to-Bottle Process
Husk’s farm-to-bottle process underscores their commitment to quality. “We have a 150-acre farm, and we’ve nearly tripled our cane production this year,” Brival said. The proximity of their farm to their sugar mill, just 150 meters away, allows for rapid processing. Cane can be cut, milled, and fermented within 30 minutes, preserving its freshness and quality.
The climate of the Tweed Caldera also plays a significant role in Husk’s aging process. The dynamic sub-tropical climate, with humid summers and cold, dry winters, enhances the interaction between the rum and the barrels, intensifying the aging process.
Barrel Selection and Aging
Husk primarily uses ex-wine barrels for aging their rum. Initially, they experimented with new oak and ex-Bourbon barrels, but logistical and cost challenges led them to explore local wine barrels. These barrels, sourced from renowned Australian wineries, are re-toasted to Husk’s specifications, offering a unique and high-quality aging environment for their rum.
“Using wine barrels was tricky initially, but we found the right cooperages and wineries that suit our style,” Brival explained. “These barrels, with their Australian history, complement our rum perfectly.”
Scaling Up and Market Disruption
Over the past eight years, Husk has grown from a craft distillery to a medium-sized business with a mission to disrupt the rum market. They offer a range of products, from the accessible Rare Blend to super-premium rums, aiming to engage consumers and build a strong brand presence.
“Our goal is to scale up while maintaining high quality,” Brival said. “We listen to our consumers and create products that reflect the provenance of our region.”
